Granola Heaven

Firstly my loves, “HELLO”…..It’s been quite some time since my last blog post, I’ve missed you all and I hope you’ve all been very well. The longer, summer days have been just the next haven’t they! Our garden is blooming, the sandals are on and I feel as though I can do much more when the days are that bit longer.

I’ve had a really busy few weeks/months with organising my first Wild & Wholesome Retreat, photoshoots, copywriting, social media management, sending out NourishMe Wellness Boxes and re-decorating our home! I’m currently sat in my pj’s with a cuppa and thought that I’d share with you my gluten & dairy-free granola recipe which happened to go down a storm at my retreat (atop my beautiful, fruity breakfast bowls).

I promised my guests that I’d give them the recipe so here’s a whole lotta granola appreciation and love for you. Warming: highly addictive!

Shopping list: 3 x cups of GF oats, 1 x cup of chopped cashews and almonds, 1 x cup of mixed seed sprinkle, 1 x cup of raisins, half a cup of olive oil, half a cup of coconut nectar.

Method: mix all ingredients apart from the raisins and add the oil and nectar until evenly coated. Spread over a large, lined baking tray and bake for 10 minutes on 180. Mix-up and bake for a further 10 minutes. Allow to cool completely, add raisins and mix until evenly distributed.

Keep in an air-tight glass container for up to 3 weeks (if it lasts that long!!!) The whole process will take you less than an hour and it has to be tasted to be believed! Who knew that something so simple could bring so much joy! Top tip: don’t let your snack hand anywhere near the jar on its own!! Haha!

Smoothie Bowl Recipe:

If like me, you adore anything related to smoothies, you will LOVE this delectable, any-time-of-day, smack-you-round-the-face nutrilicious gem!

Simply whizz-up a banana, a handful of frozen berries & nuts, coconut milk, nectar and coconut water until thick but smooth in consistency. Embellish with your favourite fruit, coconut yogurt, edible flowers and of course, your freshly-made granola of dreams!

If you’re feeling extra creative, you can add some chopped dates and some extra coconut nectar to bind the mixture and pop into a square baking tray to create your very own granola bars! They are the best grab-and-go snack for any time of the day and you can get the kids involved too! They’ll have so much fun!
