Summer Sunshine Trio


Dunk, Sprinkle, Repeat! Choccy Covered Strawberries:

These delicious, fresh, juicy, chocolate-covered strawberries are simply divine! One of your 5-a-day? Yes indeed. Vegan chocolate? Oh yeah! They are a total crowd-pleaser and everyone can get in on the action. 

I’ve used strawberries here but you can use any fresh fruit that tickles your fancy – chopped banana and pineapple are also a riot on the old taste buds. 
Simply melt a bar of vegan chocolate over a bain-marie, dunk in your fruit of choice and sprinkle with chopped nuts or desiccated coconut. Hey presto! This is the simplest yet tastiest of sweet-treat recipes.
Cashew, Raw Cacao & Rose Bliss Balls:

These bliss balls are the ultimate healthy treat for all the family. They keep for up to 5 days and they are a breeze to make. The recipe can be tweaked to suit all tastes but the base is always the same.
You will need:
200g cashew nuts, 200g dates, 2 x tbsp raw cacao powder, 1 x tsp rose water, 2 x tbsp coconut nectar, a little water to loosen mixture. 

Process ingredients until rough in texture, roll into 30g balls and sprinkle with chopped nuts or cacao powder. Chill for about an hour and serve.
This healthy, nourishing and energising recipe is just delicious. I urge you to give it whirl!
Raspberry Razzle Smoothie:

I’ve been concocting, blending and taste-testing smoothies with a great deal of gusto over the past few years and this is one of my all-time favourite flavour combinations. 
Smoothie-making with kids is so much fun. They can create their own blends and it’s a great way of getting them to eat some of their 5-a-day if they’re normally not too keen on fruit.
For this recipe you will need:
1 x handful of raspberries, 1 x handful of almonds, 3 x tbsp of coconut nectar, 3 x tbsp of coconut yogurt, 3 x tbsp gluten-free oats, water, ice.

Blend until smooth, creamy and luscious and serve in receptacle of choice.
Top tip: If you have any leftover smoothie mix, pop into an ice tray and use as the base for your next delicious blend.
