I am totally adoring the lighter, longer days and because I also adore strawberries, I made a delicious and creamy smoothie for my breakfast this morning.
This image was actually taken last summer using fresh, juicy berries but I actually used frozen ones today (with a dash of coconut nectar to bring-out their sweetness).
The ‘cream’ element comes thanks to luscious coconut milk; one of my all-time favourite ingredients. I make all types of curries and broths with coconut milk as the main component. It’s really versatile and oh-so decadent (minus the nasties).
For this rip-roarer of a smoothie blend, you will need:
1 x handful of frozen strawberries, 1 x handful of almonds, 1 x frozen banana, ice, 3 x tbsp coconut nectar and 3 x tbsp coconut milk.
Simply blend, decant and slurp! 🍓🍓🍓
