Roasted Butternut Squash & Garlic Soup with Turmeric Sweet Potato Croutons

  
Rich, creamy and velvety, this winter warmer soup is both nourishing and delicious. I made a turmeric paste and covered cubes of raw sweet potato. When roasted, they fill the room with a gorgeous heady aroma.

To make this beautiful soup you will need; 1 x butternut squash, 2 x cloves of garlic, 1 x sweet potato, 1 x vegetable stock cube, turmeric, chilli powder.

What you do; 

Chop squash and garlic cover in a tablespoon of melted coconut oil, salt and black pepper.

Roast until golden and soft.

Heat stock water and add squash and garlic, boil for 10 minutes.

Roast cubed sweet potato for 10 minutes.

Whizz-up soup. Add croutons and sprinkle with hot chilli powder for an extra kick of spice.

Butternut squash is amazing for reducing cholesterol and it is a great at boosting the good flora in the gut. 

When the food flora in the gut thrives, the body and mind can function to their optimum capacity. If there is an imbalance in the gut, health in general can be compromised.
