Pea & Avocado Holy Guacamole!
Method: Food process the peas, avocados, olive oil & garlic until smooth. Dice to tomatoes and combine, season and too with fragrant coriander…..toast some gluten-free flatbread and serve!
Shopping list: 1 x cup of frozen peas (thawed), 2 x ripe avocados, 1 x clove of garlic, 1 x of baby tomatoes, a good glug of olive oil, fresh coriander, salt & pepper to taste.
Pea, Fennel & Mint SoupShopping list: 2 x cups of frozen peas, 1 x fennel bulb, 1 x onion, 2 x stalks of celery, fresh mint, 1 x gluten-free stock cube, salt & pepper to taste, vegan yogurt for topping.
Method: Finely chop onions, celery & fennel and fry in olive oil until onions are translucent. Add peas and cover with stock. Simmer for 10 minutes (not too long as peas will lose their vibrancy), add a bunch of fresh mint and leave for 1 minute. Add seasoning and blend until smooth. Serve with fresh-out-of-the-oven GF sour dough! Bob’s your uncle!
Green Goddess SmoothieShopping list: 1 x avocado, 1 x frozen banana, 1 x handful of green grapes, 1 x tsp of Spirulina powder, juice of one lime, 3 x tbsp coconut nectar, 300ml coconut water.
Method: Blend until smooth and creamy, finish-off with a squeeze of fresh lime and serve over ice!
