If you like chocolate, you will LOVE my gluten and dairy-free energy balls. They are the perfect snack that will satisfy hunger at any time of the day!
They are totally divine and are made using only 5 ingredients. You will need a food processor; I’ve tried to combine the mixture in my blender but it doesn’t work very well.
You will need: 1 cup dates, 1 cup cashews, 3 tbsp coconut nectar and 1/4 cup gluten free oats & 1/4 cup raw cacao powder.
First, blend dates until broken down but not completely smooth (small chunks are ok). Add the cashews and blend again, follow by adding the coconut nectar and oats. You may need to add a few tbsp of water too as the mix might clog to the blade.
If the mixture is too wet, add more oats.
Weigh into 50g parts and roll in hands into balls. You can cover in more raw cacao, desiccated coconut is also a winner!
