Fresh, light and so easy to make, my pea and mint soup is both delicious and nutritious. The vivid green colour is absolutely beautiful and it is bursting with lush vitamins, all of which will help to keep your body in tip-top nic.
You will need:
1 x bag frozen peas, 1 x gluten-free veggie stock cube, 2 x handfuls fresh mint, salt & pepper to taste
Cover peas in stock water, boil until peas are just cooked, add mint, salt and pepper and whizz!
Top Tip: Take off the boil as soon as the ingredients are cooked and they’ll retain their vibrant green colour 💚💚💚
